Recipe Needed:
King fish / Spanish mackerel
2 1/2 cups of rice
1 cup of water
potatoes, tomatoes, onions
garlic, jalapenos
chile sauce
salt, cumin, black pepper
coriander powder
any oil but prefer olive
cinnamon, cloves, cardamom
bay leaves
FISH........
season the fish with salt, black pepper
cumin, and *chile sauce on both sides

place in fridge until time to fry
BOIL.......
boil potatoes add in salt into pot
once done drain out water & set aside
PREPARE........
add cloves, bay leaves, cardamom
and cinnamon stick into oil
leave it for short amount of time before
adding the uncooked rice
then after adding rice put in cumin,
black pepper, & salt & enough water
to boil rice
once rice is half cooked drain the water
out and set aside
ONIONS.........
in pan once oil gets hot add onions
once onions get golden brown take
out of oil and set aside
FRY........
fry the fish in the same oil you used for the
onions
make sure fish is golden brown on
each side
once ready take out & set aside
PAN TOGETHER.......
in oil pan put in garlic, jalapenos,
& tomatoes after a minute add chile sauce
then add black pepper, cumin, cilantro, and
salt mix well
add some fried onions
add water
add your boiled potatoes
add your fried fish
cover the dish and leave it to cook
for 10 minutes on medium heat
after 10 minutes lower the heat and add
the rice and on top the rice dizzle
liquid saffron and add rest of fried onions
cover with lid
leave it for another 10 minutes on low heat
