Hawaij is a key spice blend from Yemen, commonly used in a variety of dishes, especially meat and broths. While it can be found in Yemeni markets or Middle Eastern stores internationally, making it at home allows for a fresher and more flavorful mix. Plus, you can tweak the proportions of the spices to suit your taste.
Ingredients:
1/3 cup coriander seeds
1/3 cup cumin seeds
1/4 cup black peppercorns
2 tablespoons green cardamom pods
1 teaspoon cloves
2 teaspoons cinnamon
1 tablespoon + 2 teaspoons turmeric
Instructions:
1. Toast the Spices: Place all the whole spices (except the turmeric) in a dry skillet over medium heat. Toast them for 2-3 minutes, stirring occasionally, until fragrant but not burned.
2. Grind the Spices: Once the spices have cooled, transfer them to a spice grinder, coffee grinder, or mortar and pestle. Grind them until you get a fine powder.
3. Sift and Mix: Pass the ground spices through a fine sieve to remove any larger pieces. Mix in the turmeric.
4. Store or Share: Store the finished spice blend in an airtight glass jar. It also makes a great homemade gift when packaged in small bags or jars.
