For the Chicken Kebab:
1 kg minced chicken
180 g onion, finely chopped
60 g bell peppers, finely chopped
20 g parsley
29 g garlic, finely minced
25 g breadcrumbs
Salt to taste
1 tbsp paprika
1 tbsp red chili flakes
1 tbsp cumin
1 tsp black pepper
For the Sauce:
A little vegetable oil
100 g onion, quartered
100 g bell peppers
10 g garlic
200 g tomatoes
Hot peppers (optional)
1 tbsp tomato paste
Salt to taste
1 cup water
¼ cup vinegar
Directions
Making the Chicken Kebab:
1. Prepare the mixture: In a large bowl, combine the minced chicken, chopped onion, bell peppers, parsley, garlic, breadcrumbs, and seasonings (salt, paprika, red chili flakes, cumin, and black pepper).
2. Shape the kebabs: Use chopsticks or your hands (dampened with water to prevent sticking) to shape the mixture into kebabs, forming them into your preferred shape.
3. Chill: Refrigerate the kebabs for at least 30 minutes.
Preparing the Sauce:
1. Sauté the vegetables: Heat a little vegetable oil in a pot over medium-high heat. Add the quartered onion, bell peppers, garlic, tomatoes, and hot peppers (if using). Cook for about 5 minutes, stirring occasionally.
2. Simmer the sauce: Stir in the tomato paste and salt, then add 1 cup of water. Reduce the heat and let it simmer for 20 minutes on low.
3. Add vinegar and blend: Pour in the vinegar, then blend the sauce until smooth using a blender.
Cooking the Kebab:
1. Fry the kebabs: In a frying pan, heat a small amount of oil over medium heat. Cook the kebabs, turning occasionally, until browned and cooked through.
2. Serve: Pour some of the prepared sauce into a preheated sizzler pan, add rice, and place the cooked kebabs alongside. Serve hot!
